Watermelon Radish Salad Wrap

Watermelon radish looks normal from outside, it has gorgeous magenta shade inside. These radishes are available this time of the year in the farmers market and in some grocery stores. It is magical to see this beautiful color on the cutting board as it looks so normal from outside before you cut it. This vegetable reminds me of a modest person with the rich captivating inner beauty of kindness, empathy, and compassion.

This beautiful looking salad can fill your stomach just by looking at it. If you are prone to allergies, I would suggest steaming radish or avoid it, if you have known radish allergy.

Ingredients:
Watermelon radish
Fresh Coconut pieces
Celery
Mung bean sprouts
Capers
Goat cheese topping (optional)

Dressing:
Equal amounts of Apple cider vinegar, lemon juice(fresh), EVOO(extra virgin olive oil), a pinch of salt, black pepper.

Wrap:
Malabar spinach (Bacchali), Large leaf variety

This wrap is very convenient to take for outdoor picnics. I use Malabar spinach leaf as a wrap for many other dishes. It is super healthy, very easy to grow. This is a good source of soluble fiber, rich in vitamins C, A, iron, and calcium.
Radishes are rich in vitamin C, folate, and antioxidants. They could prevent cancer, helps with digestion and immune-boosting.
